Wednesday Recipe : Vegetable Quesadillas

QuesadillasIngredients
• ½ cup Red bell pepper
• ½ cup Yellow Peppers
• ½ cup onions Chopped
• 30 g Soya Mince
• 100g Kidney Beans
• 20g Tomato Concasse
• 1 tsp Garlic chopped
• 1 pc Jalapeno
• 1tsp Roasted Cumin Powder
• 1tsp Degi Mirch
• 1 tsp olive oil
• Salt as desired
• 6 (9 inch) whole wheat tortillasQuesadillas Ingredients

Directions
•Boil the kidney beans till tender and mash them. In a large nonstick pan add oil and sauté garlic and onions till golden brown. Add soya mince, mashed beans, roasted cumin powder, spices and salt. Mix all the ingredients well and tomato concasse and cook for 5-6 mins.
•Take a nonstick pan and sauté onion, red bell pepper, yellow peppers in olive oil over medium to medium-high heat for about 7 minutes, or until just tender. Remove vegetables from pan.
•Take one tortilla and spread the mixture of kidney beans and soya mince and red and yellow peppers and onions and cover with another tortilla.
•Place the tortilla over griller and grill till it becomes crispy and golden brown in colour
•Cut each quesadilla into 8 triangles with a pizza cutter. Serve hot.
Original recipe makes 3 quesadillas
