Treat Your Mom With Yum Breakfast & Sweet Some Things

Mothers bring so much happiness to all around. This Mother’s Day, why don’t you celebrate Mom and her motherhood by treating her with a breakfast in bed, and we bet she will be delighted with your sweet gesture. Greet her, thank her and congratulate her for being a spectacular Mother that she has been and shall always be. A Tip: Leave a card or maybe a sweet note wishing her Mother’s Day alongside a personalized message dedicated to JUST HER – ‘Dear Mom.’

1.Healthy Salad

A healthy and quick to prepare fresh Salad recipe to make at home from Anun Dhawan, Director, Mentor Hospitality Pvt. Ltd. (Master Franchise holders of Pita Pit in India)
P.S.: Add or minus turkey to the salad to make it both in Veg & Non Veg.

Turkey Ham slice – 40 grams (For Non Vegetarians)
Iceberg Lettuce – 50 gm
Tomatoes – 30 gm
Black Olives – 10 gm
Green Olives – 10 gm
Cucumber – 15 gm
Vinaigrette – 20 gm
Crumbled feta cheese – 10 gm
Hummus on the side – 30 gm
Salt and pepper

Preparation Method:

•Start with a bed of iceberg lettuce.
•Add some sliced tomatoes, black olives, green olives & cucumber.
•Toss it all together.
•Add the turkey ham slices (for Non Vegetarians) with crumbled feta cheese for the cheese lovers and some light vinaigrette.
•Sprinkle some salt and pepper. Ready to serve.

Optional – side serving of hummus.
Serving size – 1 person

2.TOMATO BOCCONCINNI CAPRESE

Ingredients:
Tomatoes – 2no.
Bocconcinni slices – 200gm
Romaine lettuce – 3leaves
Pesto – 50gm
Balsamic reduction – 1 tsp

For pesto:
Pine nuts – 50gm
Large bunch of basil
Parmesan – 50gm
Olive oil – 150ml
garlic cloves

Balsamic reduction:
Balsamic vinegar – 100ml
Sugar – 1tsp
Rosemary – 1 sprig

Preparation Method:

Pesto Preparation:
Heat a small frying pan over a low heat. Cook the pine nuts until golden, shaking occasionally. Put into a food processor with the remaining ingredients and process until smooth, then season.

Balsamic reduction Preparation:
•Heat a pan and add all ingredients and reduce it till it becomes a tick paste

Method:
•Blanch the tomatoes, deseed and deskin it
•Marinate the blanched tomatoes in a vinaigrette dressing
•Take a heart shaped cutter and alternative place the tomatoes , lettuce leave, pesto and Bocconcinni slices
•Garnish with a spoon of pesto and balsamic reduction

They have the same effect on your brain! The age old saying “love is sweet” is as true as “chocolates heighten romance.” Mother’s Day, it’s very special to receive a box of chocolates and lovelier if it’s home made by the loved one! A very easy to make and a never-fail-you recipe. The best part is that it allows you to be creative with shapes and designs!

1.Dark Chocolate Mousse
Egg Yolks 5no.
Low Fat Cream 180gm
Sugar free Chocolate 400gm
Orange Juice – 25ml
Coffee Powder – 5gm

Preparation Method:

•Whisk the egg yolks till light. In a sauce pan heat the first quantity of cream, orange juice, coffee powder and chocolate to make a truffle.
•Add in the truffle to whisked eggs yolks.
•Finally fold in the whipped cream. Refrigerate and pipe into glasses and serve.

2.Chocolates
Chocolates by Chef Abhishek Basu, The Park, New Delhi.
Ingredients:
Unsalted Roasted Nuts 100gm
Melted Dark Compound chocolate 300gmchocolates

Preparation Method:

  1. Mix unsalted roasted nuts and melted dark compound chocolate.
  2. Drop onto wax paper and refrigerate until set.
    P.S: You can add walnuts, hazelnuts, raisins or anything special! And you can buy different moulds for different shapes and use chocolate transfer sheets with different designs.
