Pasta primavera

Ingredients

1) olive oil (3tablespoons) 2) 3 minced garlic cloves 3) grated lemon zest (1tsp) 4) fussile pasta (8oz) 5) 2 small yellow squashes cut into 1/2” thick cubes 6) 1 medium sized orange bell pepper cut 1” pieces 7) 3 cups broccoli florets 8) halved cherry tomatoes (2cups) 9) 8thinly sliced green onions 10)torn fresh basil leaves (1/2 cup) 11) grated Parmesan cheese.

Procedure: 1) mix lemon zest and garlic in a bowl and set it aside 2) cook paste is salted boiling water in a large pan 3) add bell pepper and squash and cook for 4mins 4) then add broccoli and cook for 3mins 5) keeping back ½ cup water drain the pasta with the vegetables 6) return pasta and vegetables in pan again and mix with cherry tomatoes, green onions oil mixture, basil and the reserved cooking water 7) heat the total mixture in medium-low heat so that the tomatoes are hot 8)serve with Parmesan cheese.

Broccoli stir-fry with vegetables

Ingredients

1) 2 small bunches of broccoli with stems peeled and chopped 2) cleaned and sliced mushrooms (2cups) 3) 3 garlic cloves 4) oil, 1 tablespoon 5) soy-sauce, 2tablespoons 6) pinch of sugar 7) sweet chilli sauce, 2tsps 8) 1tablespoon cornstarch in 2tablespoon water 9) sesame oil, 1tsp 10) sesame seeds, 1/4th cup 11) 2 bundles of rice noodles.

Procedure: 1) cook noodles in salted boiling water 2) drain cooked noodles and set aside 3) heat oil in a large pan and sauté the minced garlic 4) after 2-3mins add mushrooms (can also add celery and carrots) 5) cook they become soft and release juices 6) add broccoli and stir 7) pour 3-4tablespoons of water and cover 8) cook till broccoli turns vibrant green in colour 9) remove lid and add chilli sauce, mirin and soy sauce 10) mix them well and then add cornstarch and water and immediately 11) remove from heat when the sauce starts to thicken 12) add sesame seeds and oil 13) mix noodles 14) add more soy sauce and chilli sauce if needed while mixing the noodles.

Creamy veggie korma

Ingredients

1) vegetable oil, 1tablespoon 2) 1 medium sized onion, finely chopped 3) 3 bashed cardamom pods 4) ground cumin and coriander, 2tsps each 5) ground turmeric, ½tspn 6) 1 green chilli, deseeded and finely chopped 7) 1 crushed garlic clove 8) thumb-sized ginger, finely chopped 9) 800gms mixed vegetables (carrots, potato, cauliflower etc.) 10) vegetable stock (300-500ml) 11) 200gms frozen peas 12)200ml yogurt 13) ground almonds, 2tbspns.

Procedure: 1) after heating oil in a large pan, fry onion and dry spices at low heat till onion turns light golden 2) add ginger, garlic and chilli and sauté 3) add the mixed vegetables and cook for about 5mins 4) add the 300ml stock and cook for about 3mins 5) remove from heat and mix into it yogurt and ground almond 6) serve sprinkled with coriander beside naan bread or basmati rice.
