Sunday Recipes for the Lazy Cook

Caught in a tight professional schedule leaving you tired? Or do you sleep late? Stop ordering foods from restaurants. Here are some easy recipes that you can make with whatever you have at home.

Mango rice

Ingredients: 1) Cooked rice (1cup).2) Grated mango (1cup).3) Mustard seeds (1tspn).4) Soaked channa dal (1/4thcup).5) Chopped ginger (1/2tspn).6) 2 green chillies.7) 2 red chillies. 8) Cilantro (1/8thcup).9) Turmeric powder.10) Oil and salt. Preparation:1) Heat a pan for 2 minutes and then pour oil.2) Sauté the channa dal and the mustard seeds in it for 2 minutes.3) Bring down the fire slightly and then add the ginger, turmeric and the red and green chillies to it.4) Add grated mango and salt to the mixture and cook till the mango melts.5) Add the cooked rice to it and mix it well.6) Garnish with cilantro before serving.

Egg pulav

Ingredients:1) Soaked rice (2 cups).2) Eggs (2).3) Oil/ butter or ghee (2tbspn).4) Sliced onion (1/2).5) Tomato chopped into pieces (1).6) Green chillies sliced at the stem (5).7) Ginger garlic paste (1 ½tspn).8) Garam masala (whole).9) Bay leaf 1.10) Salt (according to taste and 3 cups of water. Preparation: 1) Heat a pan and then the ghee/oil.2) Put the garam masala into the ghee/oil.3) Sauté the green chillies, ginger garlic paste, onions, tomato and salt in the ghee/oil.4) Break the eggs into the above mixture, scramble and sauté.5) Add the cups of water.6) When the water boils add the soaked rice and allow it to cook on a low flame.7) Garnish with cilantro before serving.

The Indian Pasta

Ingredients:1) Pasta (1cup).2) Water (3cups).3) Chopped onions (1/2).4) Tomato, finely chopped (1/2).5) 1 finely chopped green chilli.6) Ginger garlic paste (1tspn).7) Chilli powder and garam masala (1tspn each).8) All-purpose (1tspn).9) Milk (3tbspn).10) Oil (2tspn).11) Salt according to taste and coriander leaves for garnishing. Preparation:1) Heat the 3 cups of water in a pan and allow it to boil.2) Add the pasta and cook it for 5 minutes.3) Drain the water when it turns soft but remains firm.4) Heat oil in a pan and sauté the onions and green chillies till they are brown.5)Add the ginger-garlic paste and sauté.6)Now add the tomatoes and cook they are pulpy.7) Add the flour and cook for1 minute.8) Add the milk, garam masala, chilli powder, salt and sauté.9) After mixing the above ingredients well add the pasta.10) Garnish with coriander before serving.
