Recipe: Creamy and Crunchy Peanut Butter Fries

I love peanuts and I like to munch them anytime during the day. What better way to consume these healthy nuts in ‘Peanut Butter’ format.

Peanuts are nutritious,wholesome and filling snack. It goes well with your every day sandwich,milkshake or even in french fries.

Here we tell you how to make creamy and crunchy peanut butter fries in gourmet style!

Ingredients

4 potatoes, washed and scrubbed
oil (for frying)
Salt (for seasoning)

[h1]Sauce[/h1]

1 shallot, finely chopped
1 tablespoon oil
2 tablespoons yellow curry paste
1 cup coconut milk
½ cup might maple peanut butter
2 tablespoons brown sugar
1 lime, zest and juice

Toppings

1½ cups fresh cheese curds
2 tablespoons finely chopped cilantro

Peanut Butter Fries

1.Cut the potatoes into thin slice. Soak them for at least one hour, or up to 8 hours. 2. heat oil in a large pot set over medium-high heat.Pat the sliced wet potatoes completely dry with tissue paper.Fry the potatoes for 3-4 minutes, or until lightly browned and still very soft. 3.Remove from oil and transfer them to a baking sheet lined with paper towel to drain. 4.Fry the potatoes until they are crispy and golden brown. Remove and set on a fresh layer of paper towels to drain.5. Sprinkle the fries generously with salt as they come out of the fryer.

Toppings

1) Set over medium high heat, saute the shallots in oil for 3-5 minutes, or until brown. Stir in curry paste and continue cooking for 1 minute. 2)Beat in the remaining sauce ingredients. Reduce heat to medium, and bring to a simmer, whisking constantly. Let simmer for 3-5 minutes, continuing to whisk to ensure the sauce doesn’t stick to the bottom of the pot, until the sauce is smooth and thick. 3)Divide the fries between six large bowls. 4)Top each one with ¼ cup of cheese curds, then pour a generous amount of satay sauce over top. 5) Garnish with a sprinkling of cilantro, then serve immediately.
