Navratri Sabudana Kheer Recipe

Navratri season is here and so are we with this quick and easy-to-make creamy and healthy Sabudana kheer recipe made from tapioca pearls, milk, condensed milk, and dry fruits which are prepared during vrat.

Known by different names like Sago Pudding or Sago Payasam, this dessert recipe will surely satisfy your fasting crave for the sweet dish. Its creamy, smooth, milky texture and spongy pearls, crunchy nuts, exotic smell of cardamom, and golden yellowish color and fragrance of saffron will make you fall in love with this dish and asking for more.

Ingredients

● 1/2 cup sabudana (overnight soaked in the water)
● 2 cups milk full fat
● 1 1/2 cup water (1/2 cup for soaking)
● 1/2 cup condensed milk or 1/2 cup sugar
● 1/2 tsp cardamom powder
● 4-5 saffron strands
● 2 tbsp cashew nuts

Procedure

➔ Rinse the Sabudana for 2 times. Add 1/2 cup water, cover the lid and keep aside for soaking overnight or 3-4 hours.

➔ In a thick bottom pan or Kadai add 1 cup water. Boil on medium flame. Now add soaked Sabudana.

➔ Stir occasionally making sure it doesn’t stick to the bottom of Kadai.

➔ Boil water and Sabudana mixture for 4 minutes or till Sabudana turn translucent.

➔ Now add 2 cups of milk, cardamom powder, cashew nuts, saffron, and condensed milk(if using) or add sugar. Stir well the mixture.

➔ Reduce the flame to simmer for 10 minutes, stir the mixture in between.

➔ Milk will thickens after 10 minutes. Kheer is ready. Serve hot or chilled!!

Notes:

Sabudana kheer turns thick when cooled so keep in mind the consistency you want in case you want to serve it cold.

Make sure Sabudana cooks very well, soak Sabudana for a longer period it will help to cook it rapidly and soft.

This kheer is easy to digest and can be served when the stomach is upset.
