Rich, warm and sweet – the aroma of Pumpkin Halwa is something most Indian households would be familiar with and is usually prepared during Navratri when pumpkins are flooded in the market. They are high in Vitamin A, beta-carotene and Vitamin C. Hence are good for eyes, immunity and the overall functioning of the body. It is easy and quick to make with a few ingredients and tastes delicious and serves as a good dessert.
● 1/2 kg or more red pumpkin
● 1 cup grated jaggery
● 1 tbsp ghee
● 1 tsp cardamom powder
● 2-3 the chopped dry fruits as per your choice
➔ Peel the pumpkin and remove its seeds. Now chop it in large pieces so you can easily grate it. Grate it and keep aside.
➔ Heat the non stick pan. Add a tbsp of ghee.
➔ Add the grated pumpkin mixture.
➔ Mix very well. Stir in between cover the pan with its lead and cook the grated pumpkin till it become soft and little dry.
➔ Now add grated jaggery and mix it very well.
➔ Keep on stirring the halwa. Once the mixture starts thickening you will feel a bit heavy while stirring the mixture. It can take 15-20 mins to prepare.
➔ Now add chopped dry fruits, cardamom powder and 1 tsp of ghee.
➔ Mix well and halwa is ready. Serve hot!!
