Mumbaikars were given the opportunity to celebrate the culture of state we live in, and offer its guests the opportunity to experience the local ethos with a specially created Malwani food menu. At Sofitel Mumbai BKC’s Pondichéry Café, Mumbai Chef Vividh decided to bring traditional home cooked meals to his kitchen and guests.
It was a true celebration for taste buds and senses with housewives Mrs. Prathishta Armarkar and Mrs. Praja Patil – the Malwani cuisine specialists. They started their career in the industrial area at Mahakali caves providing appetising home cooked meals to the workforce there. When asked about their experience on cooking for the guests at the hotel, they called it a ‘’golden opportunity for their careers.’’
All their recipes are traditional recipes passed down from generation to generation. They had only one condition when serving guests here: to bring their own masalas in order to create the magic of Malwani cuisine. From the raving reviews given by the guests the authentic spread offering simple, home-style cooking was a rousing success.
Culled from Konkani family treasures, the festival comprised of authentic, traditional recipes from the region. Among the appetisers, their deliciously prepared Ravas fry stood out for its flavour and skill. The flesh of the fish remained intact while its rawa-cloaked skin was absolutely crisp. Surmai curry and Ravas curry cooked in traditional masalas had a spicy sting but would make you go back for more. Plenty of vegetarian options were offered with Kelyachi Bhaji which tasted nearly as good as the sea food options.
These housewives remain an example for their expertise and curiosity to cook up delectable cuisine. This saas-bahu(mother-inlaw/daughter-inlaw) duo consider it a blessing to have had their ancestors giving them a grounding & support on their choice of career.
