Red Thai Soup is made from fresh coconut milk. It is 100% vegan soup and anyone can have it.
Red Thai soup is made from various colorful vegetables hence it is very healthy.
You can have it as a starter or you can have it in main course with rice. The taste is very authentic and fabulous. Perfect soup for your brunch or dinner.
3 cups vegetable stock
3 cups fresh coconut milk
2 tbsp red curry paste (4cloves garlic+1 inch garlic+4 dried red chili+1 onion+2tbsp coconut milk+ cumin seeds 1 tbsp+ coriander powder 1 tbsp+1 bay leaf. blend well)
2 tbsp olive oil,½ tbsp turmeric,½ cup red bell pepper chopped,4 beans chopped
4 cubs of pumpkin,4 cubes potatoes,4 cubs of carrot,8 ounces seitan chopped,1/4 cup fresh basil, chopped ½ tbsp sugar
½ tbsp black pepper powder,Soy sauce 1 tbsp,2 tbsp lemon juice
Boil all the vegetables beans, carrot, pumpkin, potato in a plain water.Heat oil in a deep pan fry red bell pepper and add seitan and red curry paste stir for 3 minutes. Add vegetable stock and coconut milk, add turmeric and boiled vegetables. Bring it to boil stir continuously. Simmer it for 10 minutes on low flame. Add salt, pepper powder, lemon juice, sugar and soy sauce. Add fresh basil leaves.Serve HOT !

Tip – You can adjust vegetable quantity as per your choice.
