Winter is the time when you crave for good food and don’t mind eating a bit extra unlike summers when it’s hot and muggy. It is said that you must eat healthy and rich stuff during winters cause that helps build immunity and it keeps you healthy throughout the year. I still remember during winters mom used to make items loaded with dry fruits like laddus and halwas and as kids, we would gorge on them. These items are full of iron, calcium, proteins, and vitamins. These nutrients are enough to keep your batteries charged for the whole year.
1. Dry fruits Laddu
- 1cup grated dry coconut, 1 cup grated Jaggery
- ½ cup dry date’s powder, ½ cup almonds
- ½ cup cashew nuts, 2 tbsp poppy seeds
- ¼ tsp cardamom powder, ¼ tsp nut mug powder
- ¼ tsp dry ginger powder, 2 tsp chopped walnut
- ¼ cup fried edible gum, 1 cup pure ghee
Dry roast grated coconut till it turns slightly brown. Transfer it to the clean plate. Heat ghee and add edible gum. The gum puffs up like small balloons. Transfer fried gum into the clean plate. Allow it to cool for 15 minutes. Now grind all the above ingredients one by one, do not make a fine paste. Grind roughly. (Use food processor or grinder) The first grind roasted coconut transfers it into one large plate. Now grind almond, cashew nuts, chopped walnut and poppy seeds together. Transfer it to the same plate. Add dry date powder, cardamom powder, nut mug powder, dry ginger powder, and fried gum. Mix well. Add grated Jaggery and 1 cup liquid ghee. Mix well thoroughly. Make medium sized laddus.
Note- you can also use2 cups sugar powder instead of Jaggery.
2. Badam Halwa
- 2 cups Badam,
- 1 cup pure ghee and 1 cup milk
- 2 cups sugar
- 4 saffron stands
- ¼ tsp cardamom powder
Soak the almonds in hot water for 2 hours. Peal the outer skin and grind to a paste add milk while blending. Make one string sugar syrup add Badam paste and cook till it become thick. Add saffron strands, cardamom powder and ghee. Stir continuously on low flame. Badam halwa is ready! Serve hot!
3. Anjeer Halwa
- 150 gm Anjeer
- 200 gm khoya
- ¼ cup chopped dry fruits (almonds, cashew nuts, walnut)
- ¼ tsp cardamom powder
- 100 gm sugar
- 4 tsp ghee
- 1 tsp nutmeg powder
Wash dried Anjeer and chop them into small pieces. Cook the chopped Anjeer by adding enough water. Cook for 20 minutes. Heat the ghee in a nonstick pan add cooked Anjeer, khoya and chopped dry fruits. Add remaining ingredients sugar, cardamom and nutmeg powder. Mix well cook for another 5 minutes. Anjeer halwa is ready. Serve it, as it is or you can make small vadis. Grease a thali with ghee and spread the halwa in it. Refrigerate for 2 hours. Now cut into pieces decorate with chopped dry fruits.
