5 Quick Lunchbox Recipes for Working Women

Women work hard all day long from 9 to 6 in office. Lunch hour is the time that always bring smile on our face. Your tiffin box can add happiness when there is some variety in it. I get very bored of eating same food every day so i decided to come up with wholesome recipes which will save your time and add nutritional value to your body.

Brown bread sandwichIngredients

  1. 2 brown bread slices, 1 tbsp fresh cream (malai).
  2. 3 tbsp tomato, onion chutney for filling.
  • Procedure

Filling material-1/2 bowl chopped tomato, 1 small onion chopped,1/4 tbsp garlic paste, 1 tbsp chopped Coriander leaves, salt to taste, 1/4 tbsp turmeric powder, 1/4 tbsp chilli powder, Pinch of sugar, 2 tbsp oil. Golden fry onions, add garlic paste, add tomato, and add the remaining Ingredients stir well for a minute. Cover the lid and cook till tomato’s become soft. Tomato chutany is ready.Spread the malai on one side of both sides, Spread tomato chutany and close the sandwich.

Vermicelli upma

  1. 1 cup vermicelli
  2. 1 chopped onion
  3. 1/4 cup carrot, vertical chopped
  4. 1 green chili chopped, 2 cloves of garlic, crushed
  5. 1 tbsp coriander leaves chopped ,1 tbsp lemon juice
  6. 2 curry leaves, 1 tbsp urad dal
  7. Salt to taste, 2 tbsp oil
  8. 1-2 cup water
  • Procedure

Heat 1tbsp oil into pan and roast the Vermicelli until golden brown, transfer into the plate and keep aside, heat 1 tbsp oil add cumin seeds, curry leaves, urad dal stir well for few second, add garlic paste and onion stir well for one minute, add carrot cover the lead and cook for 2 minutes, add salt, green chili, turmeric powder, lemon juice stir well and add water, let the water boil for few minutes, add Vermicelli and cover the pan for 4 minutes, garnish with coriander leaves.

Whole grain pasta

Ingredients

  1. 1 bowl cooked whole grain pasta
  2. 1 onion vertical chopped
  3. Half tbsp garlic paste
  4. Half cup red bell paper chopped
  5. Half cup zucchini chopped
  6. 1cup tomato puree
  7. Salt to taste
  8. 1-4 cup ricotta cheese
  9. 1 tbsp dried oregano and basil crushed
  • Procedure

Heat oil in a pan add garlic,onion,bell pepper, zucchini and cook for 5 minutes, add tomato puree and cook for 5 minutes, add cooked pasta, mix well, add ricotta cheese, dried spices and salt cook for another 5 minutes

Methi Paratha

  • Ingredients
  1. 1 cup fresh chopped Methi
  2. 1-12 cup wheat flour
  3. 1-4 cup besan
  4. Half tbsp garlic paste
  5. Half tbsp cumin seeds
  6. Half tbsp ajwain, Half tbsp sesame seeds
  7. Salt to taste, Half tbsp turmeric powder
  8. Half tbsp red chilli powder
  9. 2 tbsp curd, 1 cup water to make soft dough
  • Procedure

Mix all above ingredients together and make soft dough, make equal small balls of the dough, roll the one ball by sprinkling dry wheat flower, and roast it on the hot tawa, one tbsp oil. Methi Paratha is ready.

Mix vegetable brown rice

  • Ingredients

1cup brown rice, 1 bowl mix vegetables(carrot,beans,cabbage,green peas,) 1 small onion chopped, 1tbsp ginger, garlic paste, salt to taste, 1 tbsp pulao masala, 2 tbsp oil.

  • Procedure

Soak brown rice into lukewarm water for at least half an hour, heat the pressure cooker on medium flame, add oil and 1 tbsp cumin seeds, add chopped onion and ginger garlic paste, sauté for 1 minute, add mixed vegetables, add pulao masala and salt now add rice and 2-1/2 cup water, stir well and cook up to 4 whistles. Mix vegetable brown rice is ready.
