Sunday Recipe: 5 Healthy Mix of Kidney Beans

Kidney beans are also known as Rajama in India, it is used in all over the world in the preparation of variety of dishes i.e in curries, rice, and salad. These beans are not only tasty these are more healthy also. It is a huge source of protein which provides you energy; it is well known for fiber rich pluse and maintains your blood sugar level, it contains high amount of vitamin K and vitamin B which is good for brain.

If you are using dry kidney beans always soak it in the water for minimum 4 hrs and well cook in the pressure cooker till it become soft. Add little salt and oil while pressure cooking.If you are using instant kidney beans tin wash the beans 2-3 times properly.

Kidney Bean Salad with toasted cumin seeds

Ingredients
1 bowl kidney beans
2 tbsp olive oil
1 tbsp fresh coriander leaves (chopped)
1 tbsp cumin seeds (roasted)
1 tbsp lemon juice
2 tbsp onion+ 2 tbsp green onion (finely chopped)
Salt to taste
2 pinch black pepper powder.

Method

In a large bowl whisk together oil, onion, lemon juice, pepper powder, salt add kidney beans mix well. Garnish with coriander leaves and cumin seeds.
(Note- you can add colorful capsicums or any fruit as per your choice)

Kidney beans and corn salad

Ingredients
1/2 bowl kidney beans (hot)
½ bowl sweet corns (saute in 1 tbsp butter for 3 minuts)
1 tbsp lemon juice
2 pinch black and white pepper powder
Salt to taste
2 tbsp butter
½ tbsp cumin seed powder
2 tbsp basil leaves.

Method

In large bowl whisk together butter, lemon juice, black and white pepper powder and cumin powder. Add corn, kidney beans and salt mix well garnish with fresh basil leaves.
(Note- you can add any fresh fruit as per your choice)

Carrot and bean salad

Ingredients

1 bowl kidney beans
4 tbsp fresh carrot flaks
2 tbsp olive oil
1 tbsp lemon juice
½ tbsp oregano flaks
½ tbsp chili flaks
1 tbsp parsley chopped
½ tbsp brown sugar
Salt to taste

Method

In a large bowl whisk together olive oil, lemon juice, oregano, salt, chili flaks and sugar add carrot and beans mix well garnish with fresh parsley.

Chips and kidney beans curry salad

4 Potato chips
1 bowl kidney beans
½ bowl curry
1 tbsp fresh coriander leaves
2 tbsp onion finely chopped.
In a large bowl mix kidney beans and curry garnish with onion, coriander and potato chips.

Curry

½ cup boiled onion puree
½ cup boiled tomato puree
1 tbsp garlic, ginger and green chilli paste
½ tbsp cumin and coriander powder
½ tbsp red chili powder
2 curry leaves
Salt to taste
2 tbsp oil

Method

Heat the oil in a pan add curry leaves, garlic, ginger and chili paste saute for 1 minute add onion paste saute till it become brown add tomato puree saute for 2 minutes. Add cumin, coriander powder, chili powder and salt. Saute for 5 minutes. Add little water as per the requirement.

Potato chips

1 cup potato chips horizontally chopped, salt, black pepper powder, oil for deep fry.
Heat the oil in a deep frying pan and deep fry potato chips till it become golden brown. Replace in the plate sprinkle salt and black pepper.
